For centuries, "passito" wines have been much appreciated in noble courts and aristocratic circles all over Europe. Aristocratico pays homage to this millenary winemaking process to obtain the finest wines thanks to late harvesting. Only the best grapes are selected, not to be harvested with all the others, but they are left on the plants, carefully checking the sur-maturation daily, until each grape is dehydrated. They therefore dry out and concentrate all the taste and aromas of the grapes. "Appassimento", is the quintessence of harvesting. Gianluigi Borsari has dedicated his whole life to this process of dehydrating grapes, refining the technique and the wines obtained by such process.
